leadville trail 100 | recipes | stuff


little miss carlee bug got her hard cast put on today. hot pink! cutie patootie.

my stupid left leg has gone up in flames today. which is really bad timing and i will explain that in a minute. i am seeing a neuromuscular specialist on the 31st and it can't come soon enough!

i connected my gal vic last night. she took me to dinner at saffron valley and we had a fantastic time as we always do and she spoiled me with thoughtful gifts.

anna frost and missy gosney are the first women to finish the nolan's 14! incredible! you ladies rule.

vic, mark and i signed up for the red bull 400! should be a wild time.

i have a free entry into the hidden peak challenge because it was cancelled and rescheduled last year to the weekend i ran the north face marathon. so, i think i might just do it for fitness.

ok, so here is the banana bread recipe i said i would post a long time ago. first i will put the original recipe from my mom and then i will post my modified version of it.

mom's banana bread

1 3/4 c flour
1 1/4 tsp baking powder
1/2 tsp baking soda
1/2 salt
1/3 c shortening
2/3 c sugar
2 eggs
2 tablespoons milk
1 c mashed ripe bananas (2 large bananas)
1/4 c chopped nuts (optional)

bake at 350 degrees for 1 hour

cyrie's banana bread

1 c almond flour
3/4 c sweet brown rice flour
1 1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp sea salt
approx. 3 tablespoons coconut oil
1 tablespoon grade b maple syrup
2 dashes nutmeg
3 dashes cinnamon
2 eggs
2 tablespoons almond milk
2 large ripe bananas
1/4 c chopped walnuts
i like to throw in a couple handfuls of enjoy life chocolate chips sometimes!

bake at 350 degrees for 1 hour

i store mine wrapped in plastic and foil in the fridge. enjoy either one!

o and i both have friday and monday off work and we are heading to colorado to meet brad, angie and the kiddos. brad is running the leadville 100! we have rented a fabulous place to stay. i am planning to pace brad up and over hope pass from winfield aid station to twin lakes aid station. hope pass is the highest point of the race at 12,600 feet. sounds exciting eh!? hopefully my leg will feel better than it does today. fingers crossed. we are so excited for a fun weekend in the mountains!
