a weekend! recipes, gardening and mountains^^^

in my yard // i worked for hours on it saturday afternoon. there are still weeds. and there is still so much to do. luckily, i really enjoy it. i just want it to look better! plus, a dog trick.

in my kitchen // on easter sunday. a couple of recipes i made up that were pretty tasty.

gluten free / dairy free german pancake

i only call it that because i made a real german pancake for owen and then made one with substitutions for myself just hoping it would turn out. and it did! it was soooo stinking good.

approximately 3 tablespoons coconut oil
4 eggs
1/2 cup oat flour
1/2 cup unsweetened flax milk
cinnamon
1/4 teaspoon baking powder

preheat the oven to 425 degrees. put the coconut oil in a 9 inch round, glass casserole dish and put it in the oven until the oil melts completely then remove. in a mixing bowl combine eggs, flour, milk cinnamon and baking powder and whisk by hand until mixed. pour badder into the dish with the oil. do not stir. turn the oven temperature down to 400 degrees and bake until it gets puffy like a souffle and golden brown on the outside. i ate mine with a touch of unfiltered maple syrup, bananas and blueberries on top!

gluten free / vegan pasta salad

quinoa pasta - mini shells
black olives
green olives
artichoke hearts(i used the italian seasoned ones)
sun dried tomatoes(i love the seasoned jar from trader joe's)
red onion
avocado
seasoning

cook pasta, rinse with cold water, drain and set aside. chop the red onion, artichokes(let a little bit of the seasoned juices they are bottled in pour into the bowl) and sun dried tomatoes and combine in a serving bowl. add olives and seasoning. i used pink sea salt, lemon pepper and red pepper flakes. in a separate bowl i mashed half an avocado and squeezed a generous amount of fresh lemon juice in and mixed it. add the pasta and avocado in with the other ingredients, stir it up and eat it.

i took this pasta salad to easter dinner and everyone really liked it.
