recipe, sex dreams, birks and other shenanigans

i have been facing my fears like a son of a bitch lately! picking up a praying mantis. swimming laps by myself at a new pool.  going without chocolate. just to name a few.

not eating dark chocolate is, well, it isn't right.

i have been swimming at steiner aquatic center the last few times i have swam and i really like there.  i had freaky lap pool dream all night the first night i swam there though.

speaking of dreams, thor was in mine last night and they were good and steamy like sex dreams should be.  except for the part where we were at my parents house and i was trying to hide him from my family. i tried to force myself back to sleep after i woke up, but that never works.

i got new birks for the summer.  onyx ones^^^

little carlee bug(my niece) was playing at her friends house last night in yucky old texas.  she was eaten alive my mosquito's.  ayayay!  poor thing.  

i am slowly getting some energy, speed and strength back into my runs and workouts.  i was on cloud nine after my trail run last night. i am certainly not at the fitness level i was a couple of months ago, but hopefully i will be shortly if i can keep all systems functioning!  i have 2 races in four weeks.

yesterday justin was eating a salad for lunch.  one of the pieces of spinach had a long stem on it and it went up his nose.  and then it started to bleed.  mel and i were laughing uncontrollably. we are jerks.

dinner last night.  for some reason i want to eat those little micro greens every day. o does not.  looking forward to the farmers market to be spilling over with fresh produce.

also, someone gave me a brownie recipe that is free of eggs, wheat, dairy, soy and nuts!  can you dig it?  i cannot wait to make them.  hopefully tonight after i swim. look at that recipe! it is making my mouth water and the dude that gave it to me said that they are the best brownies he has ever tasted^^^

Brownies- dairy free, gluten free, sugar free
2/3 cup packed hard, pitted dates
1/3  water
⅓ coconut oil
⅓ cup honey
⅓ cup sweet brown rice flour
3 tablespoons arrowroot starch or potato starch
⅓ cup unsweetened cocoa powder
½ teaspoon baking powder
¼ teaspoon sea salt
3 T ground flax seed
1 teaspoons pure vanilla extract
1. Preheat oven to 350 degrees. Generously grease an 8-inch square pan or a 9-inch round pan. Line with oiled parchment paper, if desired.
2. Put dates and water in a small saucepan over low heat.  Heat until soft about 3-5 minutes. Add coconut oil, honey, vanilla and cocoa. Blender or food processor, processing until smooth and creamy.
3. In a medium bowl, whisk together flour, arrowroot, baking powder, flax seed and salt until well combined.
4. Add date mixtures to dry ingredients. Mix until well combined. Do not over-mix. Scrape batter into prepared pan.
5. Bake in preheated oven on center rack until edges begin to pull away from the pan and a toothpick inserted into center comes out clean, about 20 to 24 minutes. Do not over-bake. The center may seem unset but will firm up as it cools. Place pan on a rack to cool.

and for the very best thing of all.  wait for it.  i get to meet my new nephew! finally.  baby peter.  my sister jules and her family are staying with us for a few days the first weekend of july and i am psyched.
